Hello friends! Can I take a second to just say that summer has arrived in full force for use here in southern Spain. I am not ready, like really not ready at all. I know that many of you are looking forward to longer days, warmer temps and that slow transition to summer. Well, you can take our extreme heat this week…..lol! So, with that being said, I am just on a go slow with cooking and making more Salads, sandwiches and Quick Dinners.

For years, I’ve been making this easy crostini recipe and am finally bringing it to you all today. Fresh, easy, light and perfect for summer.

Garlic Parmesan Crostini

What Is This Crostini Like

  • Difficulty – This recipe is so easy! It requires only 6 ingredients and is put together in about 10 minutes.
  • Taste – If you love fresh flavours and crispy bread, this is the crostini for you. It’s crisp and light and can even be used with a dip.
  • Serving – I got 16 slices out of this, but it’s an approximation. You can easily double the recipe up for a bigger crowd by using 2 or more baguettes.

Garlic Parmesan Crostini

Ingredients

  • Baguette bread – I used a traditional long baguette that I bought in the supermarket. Baguette bread can be often found at the bakery section of your local supermarket.
  • Parsley – Fresh parsley gives a great flavour to this crostini. I used a lot of fresh minced parsley, so don’t skip out on it!
  • Olive oil – This recipe uses extra virgin olive oil.
  • Garlic – Garlic gives a great punch of flavour to the crostini. It’s best to use fresh minced garlic.
  • Parmesan cheese – Finely grated parmesan cheese is mixed into the topping for extra flavour and texture.
  • Salt – Regular table salt helps enhance the flavour.

Instructions

  1. Preheat oven – Preheat oven to 350 degrees F/180 degrees C. Have ready a large baking tray and drizzle over the one tablespoon of olive oil.
  2. Cut the bread – Cut the baguette into thin slices on the diagonal. I got 16 slices from my baguette. You may get more or less depending on the size of your baguette and how thick you cut your slices. Place the bread slices on the baking tray and set aside.
  3. Make the topping – In a small bowl, combine the parsley, olive oil, garlic, parmesan cheese and salt. Stir well to combine.
  4. Assemble the crostini and bake – Spoon the mixture topping over all the bread pieces and spread out evenly. Place in the oven for about 15 minutes or until the bread is crispy and golden.
  5. Serve – Remove from oven and serve hot.

Recipe Tips

  • Prep ahead – You can make the topping up to 3 – 4 days before and store it in an airtight container in the fridge.
  • Cutting the bread – Use a serrated knife to make sure it’s easy to cut the bread and so it doesn’t flatten out too much when cutting.
  • Baking time – Mine baked to a crisp texture in 15 minutes. You may want yours a little softer. Take them out a few minutes earlier if you don’t want it as crisp.

Substitutions

  • Baguette bread – If you don’t have baguette bread, you can use any rustic style bread. Avoid using any kind sandwich or sliced prepacked bread.
  • Olive oil – If you don’t prefer the taste of olive oil, you can easily use melted butter. It will still work the same.
  • Parmesan cheese – The little bit of parmesan cheese adds a great extra flavour profile. If you prefer, you can easily omit this ingredient.

Serve this up with all your Pasta or Risotto dishes. It can even stand alone as an appetizer served with some of the following dips that you will love.

Easy appetizers are great for any occasion. And I have to admit, Bruschetta is one of my favourite quick appetizers to make. You just can’t beat the Fresh Tomato Bruschetta as a start to pretty much any Main Dish or as part of a big ol’ Appetizer buffet.

Bacon Lettuce & Tomato Bruschetta

What is This Bruschetta Like

  • Difficulty – This bruschetta is broken down into three parts, the bread, the herb cream cheese and the BLT salad topping. It isn’t difficult but there are quite a few ingredients in total to pull it all together.
  • Taste – A fresh tasting bruschetta with so much flavour. From crisp bread, a creamy spread and fresh salad. This bruschetta has it all.
  • Serving – This will make between 14 – 18 bruchetta slices. It depends on how thick you cut your slices really. You may have a little of the topping left over at the end.

BLT Bruschetta

Ingredients

  • Baguette bread – I used a rustic baguette loaf for this recipe. It will cut between 15 – 18 small bruschetta slices.
  • Herb cream cheese – I made my own herb cream cheese by combining cream cheese, parmesan cheese, parsley, dried dill, dried basil, dried oregano and garlic powder.
  • BLT Salad ingredients – This salad topping used shredded iceberg lettuce, sliced cherry tomatoes and crisp bacon pieces.
  • Vinaigrette – I made a simple vinaigrette for the salad topping. I just used olive oil, balsamic vinegar, salt and a little minced parsley.

Instructions

  • Toast bread – Preheat oven to 350 degrees F/180 degrees C. Lay the baguette slices on a large baking tray and drizzle with the two tablespoons of olive oil. Bake in the oven for about 8 – 10 minutes or until crisp. Remove from oven and set aside.
  • Make herb cream cheese – In a medium bowl, combine the cream cheese, parmesan cheese, minced parsley, dried dill, dried oregano, dried basil, and garlic powder. Stir well to combine and set aside.
  • Make blt salad – In a large salad bowl combine the shredded lettuce, sliced cherry tomatoes and crisp bacon pieces. Pour over olive oil, balsamic vinegar, parsley and salt. Toss really well.
  • Assemble bruschetta – Top the crisp bread with the herb cream cheese and then spoon over the blt topping. Serve immediately.

Recipe Tips

  • Prep ahead – You can make the cream cheese topping up to the day before. Just be sure to store it in an airtight container in the fridge.
  • Crisping the bread – Make sure the bread is really crisp when making bruschetta. This is help prevent it from going soggy after you top it will all the toppings.
  • Assemble before serving – Because the topping has a vinaigrette, don’t assemble the salad or top the bruschetta until just before serving.

Substitutions and Flavour Changes

  • Baguette bread – If you don’t have baguette bread, you can use any rustic style bread. Avoid using any kind sandwich or sliced prepacked bread.
  • Cream cheese – Although this recipe uses cream cheese, you could opt for using Mascarpone cheese, Cottage cheese or even cream cheese.
  • Herbs – For my herb cream cheese I only used fresh parsley, the rest were dried herbs. You could always add fresh dill if you have it on hand.
  • Cherry tomatoes – I liked using the small firm tomatoes for this bruschetta. You can use Roma tomatoes. Just be sure to dice them small and put them through a strainer to remove any excess liquid.

Serving

Top serving tip! Serve it un assembled if you like. Set out the crisp bread, the salad topping and the cream cheese spread. Let your guest make their own so each one is fresh and crisp!

Also, this BLT Bruschetta would be a wonderful starter to just about any Pasta dinner or a wonderful Portobello Mushroom and Spinach Risotto. Why not make it a part of a bigger appetizer board and serve it alongside the Italian Stuffed Mushrooms, the Caprese Salad Sticks and the Oven Roasted Italian Green Peppers.

How do I prevent bruschetta from going soggy?

Make sure your crisp the bread until it has a crunch and don’t top the bread until just before serving. Avoid overly wet toppings or it will make the bread soggy.

What is the best bread for bruschetta?

Bruschetta is best made with a rustic style bread like baguette or an Italian bread such as ciabatta. It’s a great way to use up day old bread that’s starting to go stale. In fact dried bread works wonderful for bruschetta.

Homemade Garlic Knots are a classic pizzeria favourite. These are made using homemade pizza dough that has a double rise. Baked until golden and puffed up and then topped off with a herb garlic butter. A great addition to any dinner night at home!

These are absolutely delicious on their own or with a Homemade Marina Sauce for dipping.  Or for matter, whatever dipping sauce you love the most.  Serve them alongside the One Pot Creamy Chicken Pasta and you’ll have one satisfying dinner!

What Are These Garlic Knots Like

  • Difficulty – Because this is a yeast dough recipe, these are about medium difficulty. The hands on time isn’t too long, but they are a double rise dough which will take more than two hours.
  • Taste – These garlic knots are light and fluffy with a delicious garlic butter topping.
  • Serving – This recipe makes approximately 36 garlic knots. Keep in mind you can easily adjust the serving size in the recipe card at the end of the post.

Homemade Garlic Knots

Ingredients

  • Flour – I used strong bread making flour for these garlic knots.
  • Salt – Regular table salt works just fine.
  • Yeast – I like to use instant yeast. This type of yeast is added directly to the dry ingredients and no proving is needed.
  • Sugar – Sugar is added to yeast dough to help it rise.
  • Olive oil – A small amount of olive oil is added to the dough.
  • Water – Warm water is needed for yeast dough to make the yeast active and rise.
  • Garlic butter topping – The topping uses butter, minced garlic, salt and minced parsley. It’s very easy to make and delicious.

Ingredients To Make Garlic Knots

Instructions

  1. Combine dry ingredients – In a large mixing bowl combine the flour, salt, instant yeast and sugar. Mix well to combine. Drizzle over the olive oil and just give a quick stir.
  2. Add water – Make a well in the middle of the flour and pour in the water. Using a fork, start pulling the flour into the water until you have incorporated all the flour. The dough should be really sticky at this point.
  3. Knead dough – Take the dough out of the bowl and place on a clean and lightly floured surface. Lightly flour your hands and start kneading the dough. Flip and knead the dough until it’s soft, elastic and springs back when touched. This will take between 5 – 10 minutes.
  4. Allow dough to rise – Place the ball of dough in a large flour-dusted bowl. Cover the bowl with a damp cloth and place in a warm room for about an hour or up to two hours until the dough has doubled in size.
  5. Punch dough dough – Punch down the dough and place it on a lightly floured surface. Flatten it out slightly and divide it into 4 equal portions.
  6. Form garlic knots – Take each portion and flatten it out to a rectangle/square shape that’s approximately 6 x 5 inches. Cut it into 8 equal portions. Take each portion and stretch it out like a shoelace to about 6 inches in length. Tie it into a knot and repeat for as many as you are making.
  7. Allow garlic knots to rise – Line a baking sheet with parchment paper. Place about 15 on a baking sheet about 2 inches apart. Cover with a damp tea towel leave to rise until doubled in size. About 1/2 hour to 1 1/2 hours.
  8. Bake garlic knots – Preheat oven to 400 degrees F. Bake the garlic knots for 12 – 15 minutes or until golden and ready. Remove from oven.
  9. Make topping – In a small sauce pan set over medium heat, add the butter until it melts. Add the garlic and salt and stir for just a few seconds. Leave to cook for only about 1 minute. Remove from heat and add the parsley. Stir well. Remove from heat.
  10. Brush garlic knots and serve – Brush the garlic knots with the garlic butter and serve immediately.

      Recipe Tips

      • Use bread flour – I strongly recommend using bread/strong flour for this baguette bread. It contain higher protein which produces more gluten. This ensures the bread rises properly.
      • Make sure the water is at the correct temperature – If the water is too cold, the yeast won’t activate. On the flip side, if it’s too hot, the yeast won’t work. Yeast will be activated between 105 degrees F (40 degrees C) and 115 degrees F (46 degrees C).
      • Knead the dough until elastic – It’s important to knead the dough until it’s soft and elastic. This means it was easily be stretched. Kneading the dough will vary in times. Generally anywhere between 3 – 5 minutes.

      • Dough – I used my Homemade Pizza Dough recipe for these Garlic Knots. You can always use prepurchased dough, but I can’t guarantee the same results.
      • Toppings – I used a butter based topping but feel free to use olive oil. If you like a different herb, you could try out fresh basil as well.
      • Additions – For extra flavour, add a little grated parmesan on the tops before baking.

      • They are great on their own – And of course, these are wonderful on their own warm out of the oven.

        How long will garlic knots stay fresh?

        Store garlic knots in the fridge in an airtight container up to 2 – 3 days. Reheat for about 10 minutes in a warm oven.

        Can you make dough for garlic knots in advance?

        Yes, you can make the dough ahead of time up to about one week and store it in the fridge. Bring the dough to room temperature before shaping into garlic knots.

        Ingredients

        For the dough:

        • 4 Cups flour strong white bread
        • 1 level teaspoon of sea salt
        • 1 1/4-ounce or 7 grams packet instant yeast
        • 1 teaspoon sugar
        • 2 tablespoons extra virgin olive oil
        • 1 1/2 cups warm water hot to touch

        Other:

        • 5 Tablespoons butter
        • 2 cloves Garlic crushed
        • 1/2 Teaspoon salt
        • 1 Tablespoon finely chopped parsley

        Instructions

        • In a large mixing bowl combine the flour, salt, instant yeast and sugar. Mix well to combine. Drizzle over the olive oil and just give a quick stir.
        • Make a well in the middle of the flour and pour in the water. Using a fork, start pulling the flour into the water until you have incorporated all the flour. The dough should be really sticky at this point.
        • Take the dough out of the bowl and place on a clean and lightly floured surface. Lightly flour your hands and start kneading the dough. Flip and knead the dough until it’s soft, elastic and springs back when touched. This will take between 5 – 10 minutes.
        • Place the ball of dough in a large flour-dusted bowl. Cover the bowl with a damp cloth and place in a warm room for about an hour or up to two hours until the dough has doubled in size.
        • Punch down the dough and place it on a lightly floured surface. Flatten it out slightly and divide it into 4 equal portions.
        • Take each portion and flatten it out to a rectangle/square shape that's approximately 6 x 5 inches. Cut it into 8 equal portions. Take each portion and stretch it out like a shoelace to about 6 inches in length. Tie it into a knot and repeat for as many as you are making.
        • Line a baking sheet with parchment paper. Place about 15 on a baking sheet about 2 inches apart.
        • Cover with a damp tea towel leave to rise until doubled in size. About 1/2 hour to 1 1/2 hours.
        • Preheat oven to 400 degrees F. Bake the garlic knots for 12 – 15 minutes or until golden and ready. Remove from oven.

        For the topping

        • In a small sauce pan set over medium heat, add the butter until it melts. Add the garlic and salt and stir for just a few seconds. Leave to cook for only about 1 minute. Remove from heat and add the parsley. Stir well. Remove from heat.
        • Brush the garlic knots with the garlic butter and serve immediately.

        Look no further for you next easy appetizer. This Caprese Puff Pastry is put together in minutes using tomatoes, mozzarella, pesto and puff pastry. Can be prepped in advance and baked just before serving.

        Something you will always find on hand in my fridge is Puff Pastry! There is no end what you can make from Main Courses to Appetizers and Desserts

        If you are looking for an exceedingly quick and easy nibble for a party, you have to make this Caprese Puff Pastry. I made this so many times over the years and it’s delicious. It can be served hot or at room temperature.

        What is This Pastry Braid Like

        • Difficulty – This is pretty straight forward to make. Be sure to follow the photos below for cutting and folding the pastry.
        • Taste – A flaky pastry filled with green pesto, tomatoes and fresh mozzarella cheese. A great fresh flavour using all these fresh ingredients.!
        • Serving – This will make easily 8 – 10 servings as an appetizer or side dish.

        Caprese Pastry Braid

        Ingredients

        • Puff pastry – I used ready to roll frozen Puff Pastry. This is easy to find in pretty much all supermarkets. Often, you can also find it in the chiller section.
        • Green pesto – To make this recipe very easy, I used store bought green pesto. You can always make you own if you prefer.
        • Tomatoes – Thinly sliced tomatoes are placed on top of the pesto inside the pastry.
        • Mozzarella cheese – I used a fresh mozzarella ball torn into small pieces. This added a great flavour layer to the pastry braid.
        • Egg – A whisked egg is used to brush the pastry before baking to give it a golden touch once baked.

        Instructions

        1. Preheat oven – Preheat your oven to 375 degrees F and line a large baking tray with parchment paper. Set aside.
        2. Cut pastry – Remove the puff pastry from the fridge and unroll it. Lay the pastry sheet on a sheet of parchment paper. Think of the pastry in thirds. Cut approximately 8 equal diagonal strips on each side. Start the shaping of the pastry by cutting the top corners off and then making a small oval cut at the top.
        3. Fill pastry – Spoon the pesto into the middle section of the pastry and evenly spread it out. Top with the thinly sliced tomatoes and then the torn pieces of mozzarella cheese. Leaving an 1/2 inch (1 cm) space at the top and the bottom, fold the pastry over the filling. Fold the pastry strips over each other. Gently press down the edges so they stay shut.
        4. Bake – Lift the parchment paper onto the baking tray. Brush the top of the pastry braid with the whisked egg. Bake between 20 – 25 minutes until golden and puffed up.
        5. Serve – Remove from the oven and leave to cool for about 10 minutes before cutting. Cut into slices and serve hot.

        Recipe Tips

        • Prepare in advance – Yes, you can make this in advance and store it in the fridge until cooking time. Just wrap it foil and keep in the fridge. Bake straight from the fridge.
        • Use cold puff pastry – When putting the braid together, make sure to use cold puff pastry. It’s much easier to work with. Warm puff pastry will be difficult to fold properly.
        • Follow the photos – To cut and assemble the pastry braid, I suggest you follow the photos above.
        • Serve hot or warm – It can be eaten hot or at room temperature. It is best fresh, but can easily sit out at a party for a few hours.

        Substitutions

        • Green pesto – I used store brought green pesto. You can make your own pesto if you like. Alternatively, for a different flavour you could use red pesto.
        • Fresh mozzarella – Although the fresh mozzarella is better, you can use shredded pizza mozzarella cheese.
        • Puff pastry – You can use phyllo dough, shortcrust pastry, pizza dough, pie crust or even biscuit dough. All of these will yield slightly different results, but they will work.

        Serving

        • Serving – This pastry is so versatile and can be served at a brunch, lunch, dinner or even as an appetizer. It would go great with a Bacon and Tomato Salad, the Grilled Chicken and Avocado Salad, or the Feta and Tomato Salad Cups.
        • Storage – This is best served hot and fresh, however you can bake it in advance and keep it in the fridge up to one day before. To reheat, just place it on a baking tray and reheat in a preheated 350 degrees f/180 degrees c oven for about 10 minutes.

        Frequently Asked Questions

        Can I use a different type of pastry?

        Puff pastry works best for this recipe, but you can use filo or shortcrust. Just remember, the results will be different and may require different baking times.

        Why didn’t my puff pastry puff up?

        Puff pastry need to be baked cold to puff up properly in the oven. It’s possible, your pastry was too warm when you baked it.

        Why do you brush the top of the pastry with an egg wash?

        This gives the pastry a nice golden colour when it’s baked.

        With Easter just around the corner, I’m thinking of fresh foods that can be made in advance to add to any kind of spread. Whether you are planning a Brunch, Lunch or Dinner, this dip would make a great addition. It’s fresh, light, easy to make and sure to be a crowd pleaser.

        Lemon Mint and Ricotta Dip

        Why You Will Love This Dip

        • Difficulty – This dip is the easiest recipe! It doesn’t require any special equipment or cooking at all. It comes together quickly and uses just a handful of ingredients.
        • Taste – I’d probably describe this dip as creamy yet fresh . The creamy texture comes from the smooth ricotta cheese. And the freshness from the fresh mint and lemon.
        • Serving – This is the perfect dip for a vegetable platter and makes just more than a cup serving. It would probably serve between 6 – 8 people as a dip at a party.

        Lemon Ricotta Dip

        Ingredients

        • Ricotta cheese – Ricotta cheese is the base for this dip. It’s a creamy, soft and subtle cheese. It can be purchased in the chiller section of most supermarkets.
        • Cream – I added a small amount of cream to the dip to thin out the Ricotta cheese.
        • Olive oil – This adds extra flavour and richness.
        • Lemon juice and zest – I used fresh lemon juice and zest which really brings a fresh lemon taste to this dip.
        • Garlic – I just added a little fresh minced garlic for an extra punch of flavour.
        • Salt – This helps enhance the flavours of the dip.
        • Mint – I bought a bunch of fresh mint and finely chopped about 2 tablespoons to the dip. Add a little more if you love the flavour.

        Instructions

        1. Make dip – In a medium sized bowl combine the ricotta cheese, cream, olive oil, lemon juice, lemon zest, garlic salt and fresh chopped mint. Whisk really well to combine.
        2. Refrigerate – Cover and refrigerate for at least 30 minutes.
        3. Serve – Remove from the fridge and give another quick stir. Transfer to a serving bowl and top with extra fresh mint, lemon zest and olive oil if desired. Serve with fresh vegetables and crackers.

        Recipe Tips

        • Make in advance – This recipe is best made in advance. In fact, it does need to be chilled for about half an hour before serving. The chilling time allows the dip to firm up and set.
        • Finely chop herbs – It’s best to chop the fresh mint as small as you can. You are looking to completely spread them through the dip without having having any large pieces. This will not only give an overall better flavour, but a better texture as well.

        Substitutions

        • Ricotta Cheese – Although this recipe uses Ricotta cheese, you could opt for using Mascarpone cheese, Cottage cheese or even cream cheese.
        • Fresh mint – If you find fresh mint too strong, feel free to use on of your favourite fresh herbs like fresh basil.
        • Use as a spread or dip – If you don’t fancy using this as a dip, feel free to use it as a spread for sandwiches or on Lemon Ricotta Bruschetta.

        What is Ricotta cheese?

        Ricotta is an Italian soft milk whey cheese. It’s commonly used in lasagna, casseroles and stuffed pasta dishes.

        Can you freeze dips with Ricotta cheese?

        Dips with Ricotta cheese do not freeze very well. When defrosted it will most likely have a grainy texture. So, it’s best to avoid freezing.

        Why is my Ricotta dip runny?

        If you make it in advance, it may appear a little runny. Just give it a quick remix and possibly add a little more cheese to thicken it up.

        If you’re a fan of Crispy Oven Fries, you are going to love these Beer Battered Onion Rings. These make a great appetizer or side dish. And if you’re planning a game night in, you need to put these on your menu!

        What Are These Onion Rings Like

        • Difficulty – This recipe is about medium difficulty to make. They aren’t complicated but you really have to pay attention to the cutting of the onions, the consistency of the batter and the frying. Please check the recipe tips section below to make sure yours turn out right.
        • Taste – These have a crispy texture, onion flavour and a seasoned batter.
        • Serving – This recipe will make about 4 servings as an appetizer or a side dish. You can adjust serving size in the recipe card at the end of the post.

        Battered Onion Rings

        Ingredients

        • Onion – I used a large yellow onion and cut it into about 1/2 inch rings.
        • Flour – All purpose flour is used as a base for the batter.
        • Seasonings – I seasoned the flour with garlic powder, onion powder, paprika, oregano, salt and pepper.
        • Egg – One large whisked egg is added to the batter.
        • Beer – I used just regular ale beer for the batter. It creates a light batter that puffs up great!
        • Vegetable oil – You can use any kind of vegetable oil for frying. I used sunflower oil for these onion rings.

        Instructions

        1. Make batter – In a large shallow bowl, sift together the flour, garlic powder, onion powder, paprika, oregano, salt and black pepper. Add the beaten egg and incorporate. Gradually pour in the beer until you have the desired consistency. Stir until you have a smooth batter.
        2. Heat oil – Heat oil in a large heavy bottomed pan. Make sure the oil is at least a couple of inches deep in the pan so the onion rings are immersed in the oil.
        3. Cook onion rings – When the oil is hot, dip each onion in the batter and coat evenly. Place in the hot oil. Cook until golden and cooked through. This will take about 3 minutes per batch. Remove from pan and let drain on paper towels. Repeat for remaining onion rings.
        4. Serve – Serve these hot and fresh for best results.

        Notes About The Onion Rings

        • Don’t cut the onions too thick – The likely result will be hard onions on the inside that you have to chew through.   
        • Peel the skin off the onions – Okay, so when you cut the onions into rings, you will notice that there is a thin skin that you can peel off. By taking this off the onions, they are less likely to come out of the batter when you bite into them.
        • Batter just before frying – Dip one at a time in the batter and coat completely.  If there is excess batter on the onion ring, gently tap it off before cooking. 
        • Check oil is ready – You will notice that it sizzles straight away.  Make sure the oil is not too hot to burn the onion rings.  So, test one or two before you get into cooking your big batch. 
        • Watch onion rings as they cook – If you notice the batter is browning before the onions are cooking through on the inside, you will need to reduce the heat in your pan.  They should be golden brown and crispy with a crunch!  If they are under cooked they will be soggy. 
        • Cook the onion rings in batches.  For this amount, it took about 4-5 batches to have them all cooked.  Remember, each batch only takes about 3 minutes to cook.  So, it isn’t as time consuming as you many think.

        Substitutions

        • Yellow onions – Alternatively you could use white onions for this recipe.
        • Beer – I used a light ale beer with 5% alcohol. You can use alcohol free beer no problem at all.
        • Vegetable oil – I used sunflower oil. You could use canola oil or peanut oil.
        • Alternative cooking method – I fried these is shallow oil. You can cook them in your deep fryer, air fryer or even bake them in the oven.

        Frequently Asked Questions

        What should onion ring batter look like?

        Onion ring batter should be similar to pancake batter. So, when you dip the onion rings, it should stick and coat the onions but the excess should fall off.

        What temperature should you fry onion rings at?

        The best temperature to fry onions rings is about 325 degrees F/162 degrees C. You can use a thermometer if you are unsure if your oil is ready. The onion rings will sizzle when they hit the oil if the oil is hot enough.

        Can you make onion rings in advance?

        Onion ring are best served fresh for a crisp texture. However, you can reheat them on a baking tray in a preheated 350 degrees F/180 degrees C oven for about 10 minutes. They won’t be as crisp but they will still be really good.

        Nachos are always a hit at our place and these Loaded Veggie Nachos are fantastic! The fresh chopped vegetables gave them a very fresh flavour that you don’t want to miss out on!

        What Are These Nachos Like

        • Difficulty – This is a very easy recipe and requires no cooking skills at all. It’s all done in under 30 minutes!
        • Taste – This dish has the classic nacho taste. The crisp nachos with fresh vegetables and melted cheese. A great Tex Mex appetizer for any party.
        • Serving – This recipe makes 4 generous servings. It will easily serve more as part of a bigger spread. And in the recipe card at the end of the post you can easily adjust serving sizes.

        Loaded Vegetable Nachos

        Ingredients

        • Bell peppers – I used a mix of red, yellow and green bell peppers.
        • Onion – For these nachos, I used red onion. Adds a nice flavour as well as colour.
        • Tomato – I also added a chopped tomato for freshness to the topping.
        • Lime juice – Juice of one lime is added to the topping mix which adds a punch of flavour.
        • Salt – I added a little salt to enhance the flavours.
        • Tortilla chips – Make sure to buy thick tortilla chips. The thin ones will break apart and they won’t be strong enough to hold the toppings.
        • Cheddar cheese – I used mild cheddar which worked really well for the nachos.
        • Toppings – After mine were baked, I topped them with diced avocado, jalapeños and fresh cilantro.

        3. Assemble and bake – On a large oven proof sheet pan, spread out the nachos. Evenly spread over cheese and then the vegetables. Bake in oven for 10 – 12 minutes or until golden and bubbly.
        4. Top and serve – Remove from oven and top with avocado, jalapeños, and fresh cilantro. Serve straight away.

        Recipe Tips

        • Prep ahead – The topping can be made up to 24 hours before using.
        • Use sturdy nachos – It’s important to buy thick nachos for this recipe. They will hold up in the recipe and won’t fall apart.
        • Dice everything the same size – To get a good bite, make sure to dice all the vegetables the same size.
        • Deseed the tomato – Make sure to deseed the tomato before dicing. the centre of tomatoes contain a lot of juice and this will make the nachos soggy.
        • Bake until crispy – These will be baked at about 10 minutes. Make sure they are nice and crispy before taking them out of the oven for best results.
        • Serve hot – Nachos have to be served as soon as they come out of the oven. They will go a little soggy the longer they sit out before serving.

        Substitutions

        • Cheddar cheese – I used a pretty mild cheddar cheese but you could use an aged cheddar or Monterey Jack cheese.
        • Peppers – A great alternative to the topping I made would be the Pico de Gallo.
        • Toppings – I topped mine with jalapenos, avocado and cilantro. You can mix it up and serve salsa, sour cream, guacamole or any other of your favourite Tex Mex toppings.

        What is This Appetizer Like

        • Difficulty – This is a super easy appetizer that requires only four ingredients, can be prepped in advance and even a beginner in the kitchen can make them with success.
        • Taste – Light and flaky pastry with melted brie cheese and sweet apples.
        • Serving – This recipe uses one sheet of puff pastry and makes 16 little bites. Feel free to adjust the serving in the recipe card to make more for a bigger crowd.

        Ingredients

        • Apples – I used golden delicious apples for this recipe. The apples should be peeled and thinly sliced for best results.
        • Brie cheese – Brie cheese can easily be found in the chiller section of you local supermarket. It has a great flavour and bakes really well.
        • Puff pastry – I used a sheet of ready to roll puff pastry cut into 16 equal squares.
        • Egg – A whisked egg is used to brush the tops of the pastry to give it a golden colour when baked.

        Instructions

        1. Preheat oven – Preheat oven to 350 degrees F/180 degrees C. Line a baking sheet with parchment paper and set aside.
        2. Cut puff pastry into squares – Cut the puff pastry sheet into 16 equal squares and place them on your baking sheet.
        3. Top and fold pastry squares – Top each pastry square with 3 – 4 apple slices and then top the apple slices with a square of brie cheese. Fold the corners of the puff pastry into the centre and gently press together so they don’t come apart. Brush all the pastries with the whisked egg.
        4. Bake and serve – Bake between 15 – 20 minutes until golden and puffed up. Remove from oven and serve warm.

        Recipe Tips

        • Using puff pastry – Make sure you pastry is fully defrosted or it will break when trying to use it. Also, make sure it’s cold or it will be difficult to work with.
        • Cut the apples evenly – Make sure to cut the apples as even as you can to ensure they all cook and are soft.
        • Make ahead – You can prepare these up to 24 hours before baking. Just over and keep refrigerated until you are about to bake and serve.

        Substitutions

        • Puff pastry – You can use phyllo dough, shortcrust pastry, pizza dough, pie crust or even biscuit dough. All of these will yield slightly different results, but they will work.
        • Apples – For a different flavour, you could even use pears.
        • Brie Cheese – Camembert, goat cheese or Feta would all make good alternatives.

        This is a fantastic Appetizer to serve at Christmas or any other fall or winter celebration. If you’re looking for some serving suggestions, I’ve listed a few for you here below.

        Storage – These are best served hot and fresh, however you can bake them in advance and keep them in the fridge up to one day before. To reheat, just place them on a baking tray and reheat in a preheated 350 degrees f/180 degrees c oven for about 10 minutes.

        Each year, during the holidays, I like to give a few new appetizers a try out to see if we find any new family favourites. To this day, our go to appetizer must have are the Easy Sausage Rolls, Caramelized Onion and Goat Cheese Tarts and the Bacon Wrapped Dates with Pecans. Without fail, we have those on Christmas Eve.         Cheese Christmas Tree Appetizer

        What is This Christmas Tree Cheese Appetizer Like

        • Difficulty – This is super easy using 5 ingredients, it’s no bake and can be done in about 20 minutes!
        • Taste – A great combination of smooth brie, with sweet honey and salty pistachios!
        • Serving – This recipe uses one cheese wheel and makes 16 small cheese trees. You can easily double the recipe for a bigger party.

        Brie Christmas Tree Appetizer

        Ingredients

        • Cheese – I used a Brie cheese wheel. You can find these in the chiller section of most supermarkets.
        • Nuts – You can use any kind of nuts that you like, I used finely chopped pistachios.
        • Honey – I used liquid honey. This not only adds sweetness but allows the nut mixture to stick to the cheese.
        • Parsley – A small touch of finely chopped parsley adds colour and flavour.
        • Pretzel sticksPretzel sticks work great for the tree trunk.

        Ingredients to Make the Brie Christmas Tree Appetizer

        Instructions

        1. Chop nuts and parsley – Finely chop the pistachios and the parsley. Combine both ingredients well and spread out on a flat surface or plate. Set aside.
        2. Cut cheese – Cut the cheese wheel into 8 equal wedges. Take each cheese wedge and cut it through the centre so you will have two thinner cheese wedges. Repeat for all cheese wedges.
        3. Insert pretzel sticks – Break the pretzel pieces into two pieces and gently push 1/2 of a pretzel stick into the bottom centre of the cheese wedges. Repeat for all.
        4. Coat and serve – Dip the cheese in the honey and the coat with the pistachios. Transfer to a serving platter and serve.

        Recipe Tips

        • Inserting the pretzel sticks – Make sure the cheese is at room temperature. The pretzels should be quite short so it will be less likely for them to break. As well, if you still have problems, use a wooden skewer to make a hole and then insert your pretzel.
        • Make ahead – You can make these ahead of time except for inserting the pretzel stick. Add the pretzels just before serving so they don’t go soggy.

        Mini Cheese Tree Appetizers

        Substitutions

        • Cheese – I used a Brie cheese wheel, but you could easily use Camembert or the laughing cow triangle cheese. Both of these are great alternatives.
        • Nuts – This recipe used pistachio nuts, but feel free to use any kind of nuts that you like. Some great alternatives are pecans, walnuts, almonds or even cashews. Just use a flavour nut that you like.
        • Herbs – I used parsley, but feel free to use chives or even fresh chopped basil for a different flavour.
