Baked Honey Lime Salmon

I absolutely love salmon dishes and make a salmon dish pretty regularly. My Baked Salmon with a Lemon Basil Cream Sauce is so good and you won’t be disappointed if you give that one a try. As for this dish, I assure you it will be an absolute favourite when you give it a try.

What Is This Salmon Recipe Like

  • Difficulty – This is a very easy recipe that only takes about 10 minutes prep time and 20 minutes to cook. You can prep in advance and then bake before serving.
  • Taste – The honey and lime in this dish gives it a wonderful sweet yet tangy flavour. It pairs great with salmon!
  • Serving – Makes about four servings. In the recipe card at the end of the post you can easily adjust the servings to suit your needs.

Baked Honey Lime Salmon

Ingredients

  • Butter – I used unsalted butter. Butter helps create a rich marinade for the salmon.
  • Garlic – Fresh minced garlic adds a punch to the marinade. I don’t recommend using garlic salt, but you can use jar fresh garlic.
  • Honey – I used regular liquid honey.
  • Lime juice – I recommend using fresh lime juice. If you don’t have any fresh limes, you can use the bought lime juice.
  • Salmon – I used a one pound piece of salmon filet. This can be frozen or fresh. If using frozen salmon, make sure it’s defrosted before cooking.
  • Salt – I seasoned the salmon with regular table salt.
  • Black Pepper – Fresh cracked black pepper adds a nice sharp taste to this dish.
  • Parsley – For a touch of freshness, I just added some fresh chopped parsley.
  • Lime slices – Lime slices are completely optional, but they add a nice finishing touch to the dish if you have them.

NOTE, The full recipe and ingredient list can be found at the end of the post in the recipe card.

Ingredients to make honey lime salmon.
Ingredients to Make Honey Lime Salmon

Instructions

  1. Preheat oven – Preheat your oven to 350 degrees F/180 degrees C. Have ready a baking tray and a sheet of aluminium foil. Set aside.
  2. Make marinade – In a small saucepan set over medium heat, melt the butter for about 1 – 2 minutes. Add the garlic and bring it to a sizzle. Add the honey and lime juice, stir well and bring to a simmer. Remove from heat.
  3. Prepare salmon – Place the salmon on the sheet of aluminium foil. Pour over the marinade. Season with salt and pepper and sprinkle over fresh chopped parsley. Add lime slices if desired.
  4. Bake salmon – Fold over the aluminium foil and place on the baking tray. Bake between 18 – 20 minutes until fully cooked.
  5. Serve – Remove from the oven and serve with the extra marinade in the foil.

Recipe Tips

  • Prep ahead – You can make the marinade ahead of time and have the salmon ready in foil in the fridge. Just simply pour over the marinade when you’re ready to bake.
  • Use a thermometer – You can use a meat thermometer to check to see if the salmon is fully cooked if you are unsure. Salmon is cooked at 145 degrees F/63 degrees C.

Substitutions

  • Butter – You can use olive oil if you prefer the flavour no problem at all.
  • Honey – I used a clear liquid honey. You can opt for the thicker honey that’s cloudy. Both will work the same.
  • Lime – For a different flavour, this will work with lemon juice no problem at all.
  • Salmon filet – I bought a ready to cook salmon filet at the supermarket. You can also use salmon steaks. Keep in mind if you buy frozen salmon, make sure to defrost it completely before cooking.

Frequently Asked Questions

How long will uncooked salmon keep in the fridge?

I wouldn’t’ keep uncooked salmon in the fridge for more than two days. And make sure it’s stored in an airtight container.

How long can you keep cooked salmon in the fridge?

Cooked salmon can be kept in the refrigerator up to four days. Just make sure it’s kept in an airtight container.

Can you reheat cooked salmon?

While you can reheat cooked salmon, it does run of risk of drying out. I’d recommend wrapping it in foil and placing it on a baking sheet. Heat slowly in a 250 degree f oven for about 10 – 12 minutes or until warmed through.

Is there a difference in taste with fresh and frozen salmon?

Unless you live near the water where salmon is caught, you’ll have to use frozen salmon. It’s perfectly fine and honestly it still tastes great. Just make sure your salmon is fully defrosted before cooking.

How do you know when salmon is fully cooked?

Salmon will flake apart easily with visible separating lines when fully cooked.

What Are Sheet Pan Meals

Sheet Pan Meals are simply dinners that are all baked on one large tray in the oven. Generally there is some kind of chicken, fish or meat with vegetables. But you can pretty much add anything you would like to a sheet pan dinner.

Tips For Creating Your Own Custom Sheet Pan Meals

  • Cut evenly – Make sure to cut your vegetables evenly to ensure even cooking.
  • Think about cooking times – Different ingredients often cook at different times. Often you can add everything to the pan at the same time which makes it even easier. However, with some meals, you may need to add ingredients at different times.
  • Use parchment paper – You can use parchment paper in all sheet pan meals. This helps prevent sticking as well as easy clean up!
  • Rotate pan 1/2 way through cooking – I find it’s best to rotate the pan half way through cooking to ensure even cooking.
  • Spread ingredients evenly on the pan – Again, to ensure even cooking, try to make sure the ingredients don’t overlap and that they are nestled in nicely. This will allow even cooking.
  • Allow to rest after cooking – For best results with sheet pan meals, allow them to rest for about 5 minutes before serving.

Maybe this is my prompt to cook more sheet pan dinners this fall. If you’ve had a chance to check out the Old Bay Sheet Pan Chicken and Squash in the past and liked it, I think you’ll love this one as well.

What is This Salmon Dish Like

  • Difficulty – Make this for a quick and easy dinner. It can all be prepped ahead of time and popped in the fridge before cooking time.
  • Taste – This dish has a fresh and light taste. The salmon is tender and flavourful from the marinade. The vegetables are tender and a little crisp with a fantastic flavour from the marinade.
  • Serving – This recipe will serve four as a light meal. I recommend serving it with some bread and a salad for a bigger meal. This dish really does have to be served fresh for best results.

Sheet Pan Salmon and Green Beans

Ingredients

  • Salmon – I used a one pound salmon fillet for this recipe. I cut it into four small strips for four servings.
  • Green beans – This recipe uses fresh green beans. I kept them whole and just trimmed the ends.
  • Carrots – Carrots were also a nice addition. I used two large carrots and cut them into small rounds.
  • Onion – I like the flavour that onions adds to many dishes. In this case, I chose a small white onion and cut it into about 2 inch pieces.
  • Marinade – I made a marinade of olive oil, lemon juice, white vinegar, brown sugar, garlic, oregano, salt and black pepper.
  • Lemon slices – I added extra lemon slices to the dish before cooking. This isn’t necessary, but looks nice!

NOTE, The full recipe and ingredient list can be found at the end of the post in the recipe card.

Ingredients to Make Sheet Pan Salmon and Green Beans

Instructions

  • Preheat oven – Preheat oven to 400 degrees F/200 degrees C.
  • Arrange baking tray – Arrange the salmon pieces, green beans, carrots and onions on a large baking tray.
  • Make marinade – Make the marinade by combining the olive oil, lemon juice, vinegar, brown sugar, garlic oregano, salt and black pepper in a small bowl. Whisk to combine.
  • Bake the salmon and vegetables – Pour the marinade evenly over the salmon and vegetables. Place the tray in the oven and bake for approximately 30 minutes or until the salmon and vegetables are cooked through.
  • Serve – Remove from oven and serve immediately.

Recipe Tips

  • Pan size and type – I used a large low rimmed baking sheet for this dinner. As you can see the food nestled in nicely. By not having space around the chicken or vegetables, the food will produce more pan juices.
  • Evenly cut vegetables – When cutting the vegetables, try to make them as close to the same size as possible. Uneven sized vegetables will cook differently and you may end up with overcooked or under cooked vegetables.
  • Bake just before serving – This dish is best served fresh out of the oven.

Substitutions

  • Salmon fillets – I used a 1 pound salmon fillet for this recipe. I cut it into 4 smaller pieces to make for easy serving. You could just as easily leave it whole if you prefer. Alternatively, you could use salmon steaks.
  • Vegetables – You could easily use asparagus, broccoli or brussel sprouts for this recipe. Sweet potato pieces would also go well.

Fried Calamari

What is This Calamari Dish Like

  • Difficulty – This recipe is about medium difficulty. Although, there are few ingredients and the cooking time is only minutes, you have to pay attention to get them just right. I strongly suggest you follow all the recipe tips that will in in the post as well as the recipe card at the end of the post.
  • Taste – These calamari rings are delicious. They are not overly fishy at all, they are tender and crispy.

Fresh cooked calamari.
Fried Calamari Recipe

Ingredients

  • Squid rings – I used frozen squid rings.
  • Milk – Milk (any kind) is used to soak the squid rings in before cooking. This not only helps tenderise the calamari, but it takes away the fishy taste.
  • Salt – A small amount of salt is added to the milk.
  • Flours – I used a mix of all purpose flour and cornstarch for the coating of the rings.
  • Seasonings – I used cayenne pepper and black pepper to add to the flour to season the rings.
  • Oil – I used vegetable oil to fry the calamari
  • Lemon wedges – I used lemon wedges to serve with the calamari rings.

NOTE, The full recipe and instructions can be found in the recipe card at the end of the post.

Ingredients to make calamari.
Ingredients to Make Crispy Fried Calamari

Instructions

  1. Soak squid in milk – In a medium sized bowl combine the milk with the salt and stir to combine. Add the squid rings and make sure they are completely coated in the milk. Cover and refrigerate for about one hour.
  2. Make flour coating – In a large shallow bowl, combine the all purpose flour, cornstarch, cayenne pepper and black pepper. Whisk to combine.
  3. Coat squid rings – Remove the squid rings from the fridge. Have ready a large clean plate. Dredge the squid rings in the flour mixture and make sure they are completely coated.
  4. Bring oil up to temperature – Fill a deep sided skillet with the vegetable oil. Fill it to about 3 inches up the sides. Bring the oil up to temperature about 350 degrees f and try not to exceed about 370 degrees f. It should take about 3- 5 minutes to bring the oil up to temperature.
  5. Fry the calamari rings – Place one calamari ring in the oil to test it. If it sizzles and bubbles appear around the ring, the oil is ready. Place as many rings in the pan as you can without overlapping them. As they start to fry they will start to turn golden brown, become crisp and float to the top. Remove them as they cook and place on paper towels to drain. Repeat for all calamari rings.
  6. Serve – Serve immediately with a little sprinkling of salt and lemon wedges.

Recipe Tips

  • Don’t skip the soaking – Soaking the calamari allows them to tenderise. If you skip this step, you will likely have touch and chewy calamari rings.
  • Coat just before frying – It’s best to coat the squid just before frying. If you do it in advance, the flour will become soggy.
  • Shake off excess flour – When coating the squid rings be sure to shake off any excess flour. If not this will fall off the calamari when frying.
  • Be precise with temperature – The most important thing when frying is to make sure the temperature is right. An ideal temperature is anywhere between 350 degrees f – 370 degrees f. I like to use a frying thermometer when cooking so I can adjust the heat as needed.
  • Salt as soon as they are fried – As soon as you drain the calamari on paper towels, sprinkle over the salt. This will ensure that the salt sticks to the calamari.

Substitutions

  • Frozen calamari – I used frozen calamari rings for this recipe. It kept is simple and easy. You can opt for using a fresh squid. If you do this, make sure to cut the rings to about 1/2 inch in thickness. Then just follow the recipe as stated.
  • Vegetable oil – I used sunflower oil for frying the calamari rings. You can also use canola oil or peanut oil.

Serving

I like calamari served with fresh and light side dished because it’s a fried food and a little heavy. Here’s a few Salad options that you will love to serve with this dish! And don’t forget the Homemade Tartar Sauce!

Baked Cajun Shrimp

If you’re a regular reader of the blog, you’ll probably understand my love for Cajun Seasoning. From my Grilled Cajun Chicken Salad, to the Cajun Chicken Kebabs, the creamy and delicious Cajun Shrimp Alfredo, there’s no end to how much I love using this homemade spice blend. So, adding to these Baked Cajun Shrimp was the next obvious choice.

What’s This shrimp Dish Like

  • Difficulty – This recipe is really easy. Cooking time is in only 10 minutes and it’s baked in the oven for easy clean up.
  • Taste – These shrimp are tender, juicy and have a hint of spice.
  • Serving – As an appetizer this recipe will serve four people. However, it you are serving it as part of a main course with side dishes, I would say it’s two servings.

Cajun Spiced Shrimp

Ingredients

  • Shrimp – I used frozen jumbo shrimp for this recipe . I used the kind that come in the shells and you peel and clean them at home.
  • Olive oil – I used extra virgin olive oil in this recipe.
  • Seasonings – I used a homemade blend of Cajun Seasoning using paprika, salt, garlic powder, black pepper, onion powder, oregano, dried chili flakes and dried thyme.

REMEMBER, The full recipe and instructions can be found at the end of the post in the recipe card.

Ingredients to make the Cajun Shrimp

Instructions

  1. Preheat oven – Preheat oven to 425 degrees f/218 degrees c.
  2. Peel shrimp – Peel and devein the shrimp leaving the tails in tact.
  3. Season shrimp – In a small bowl combine the shrimp with the olive oil and Cajun Seasoning. Give a good stir to combine.
  4. Cook shrimp – Place shrimp on a baking tray and bake for about 10 minutes or until the shrimp is pink and cooked through.
  5. Serve – Remove from oven and serve immediately.

Recipe Tips

  • Use large or jumbo shrimp – This recipe is best if you use large shrimp. Mine were jumbo size and they are easy to work with and a perfect bite.
  • Prep ahead – You can completely prepare these ahead of time and keep them in the fridge. If you are hosting a party or serving these as an appetizer, I recommend you prep them in the morning and keep them covered in the fridge until you are ready to cook them.

Substitutions

  • Jumbo Shrimp – I always like to use jumbo shrimp that are bought in their shells. I find the shrimp frozen in their shells have a better flavour. You can buy the shrimp that are already peeled and cleaned if you prefer. Just make sure they are raw shrimp and not cooked.
  • Olive oil – I like the flavour that olive oil gives to these shrimp. You can use melted butter if you prefer.
  • Seasoning – I used a simple Homemade Cajun Seasoning. Alternatively, you can just as easily use a store bought blend of Cajun seasoning.

Frequently Asked Questions

Can I reheat shrimp?

No, these do not reheat well. I recommend making them as you are about so serve them. Reheating them will dry them out and make them rubbery.

Can I marinade shrimp?

You can marinade shrimp in lemon juice and garlic. Keep in mind not to do this any longer than 30 minutes. The acid in the lemon juice will start to break down the fibres of the shrimp.

  • Difficulty – This is a two part dish that’s really easy to make and on the table in 30 minutes!
  • Taste – This salmon and lentil dish has a fantastic flavour . The salmon is perfectly charred on the outside and tender and flaky inside. The lentils have a soft yet flavourful taste from the mustard and tarragon. it’s also a healthy dish with under 400 calories per serving.

Salmon with Lentils in a Mustard Butter

Ingredients

  • Salmon – I used 4 small salmon fillets for this dish.
  • Lentils – This dish used precooked brown lentils.
  • Leek – Leeks add a wonderful earthy flavour to dishes. They are part of the onion family but not as sharp as onions.
  • Garlic – Fresh minced garlic.
  • Lemon – I used fresh squeezed lemon juice.
  • Parsley – Fresh chopped parsley.
  • Tarragon – I used dried tarragon for a great flavour.
  • Mustard – Grainy Dijon mustard was used in this recipe.
  • Balsamic Vinegar – This adds a nice punch to the lentils
  • Butter – I used butter to cook the lentils as well as the salmon.
  • Seasonings – Table salt and black pepper.

REMEMBER, The full recipe and instructions can be found at the end of the post in the recipe card.

Ingredients to make salmon and lentils.
Ingredients to make the Salmon and Lentils

Instructions

  1. Make mustard mixture – In a small bowl, combine the mustard, juice of half a lemon, fresh chopped parsley, tarragon, salt and pepper. Stir and set aside
  2. Cook lentils – In a large skillet set over high heat add 2 tablespoons of butter and about 1/2 of the garlic. Give a good stir and toss in the leeks. Stir for a minute and let cook for about 5 -8 minutes to cook and brown. Add the lentils, the mustard mixture and the balsamic vinegar. Stir and cook for about 1-2 minutes. Remove from heat and set aside.
  3. Cook salmon – With a medium skillet set over medium heat, add the remaining butter and garlic. Season the salmon fillets with salt and add to the pan. Cook on each side for about 4 minutes. Squeeze over lemon juice and remove from pan.
  4. Serve – Serve the salmon over the lentils, top with parsley garnish and fresh black pepper.

Recipe Tips

  • Time saving – I used a jar of precooked lentils. This saves so much time in putting together this recipe . If you cook lentils from dry, they will take about 30 extra minutes.
  • Multi tasking – While the lentil dish is finishing off, cook the salmon. This way both dishes will be ready at the same time.
  • Don’t overcook salmon – If you overcook the salmon, it will dry out. So be careful. Times will vary depending on the thickness of your salmon. My salmon pieces were about 3/4 inch thickness and I cooked the first side for four minutes and then flipped and cooked for a further three minutes.

Substitutions

  • Precooked lentils – I used precooked jar lentils. This is easy and convenient. You could use dry lentils and cook them yourself. Lentil will cook in boiling water in about 30 minutes.
  • Grainy Dijon Mustard – I you don’t have or don’t prefer grainy mustard, you can just use regular Dijon Mustard for these lentils.
  • Dried Tarragon – Dried tarragon adds a wonderful flavour to this recipe. Alternatively, you could use fresh tarragon, fresh chives or dried oregano with similar results.

Serving Suggestions

This salmon and lentil dish is whole meal on it’s own. It would go great with some Stove Top Nann Bread on the side and Tzatziki for a bigger meal. It’s a great meal to serve through the week on busy days or save for entertaining at the weekends.

Frequently Asked Questions

Do you need to soak uncooked lentils?

Unlike many other larger legumes, lentils do not need to be soaked. If you are cooking your own lentils, just rinse the dry lentils and then cook them for approximately 30 minutes.

What is tarragon?

Tarragon is one of the four fine herbs in French cooking. It has a licorice like taste because of the same compound that’s found in fennel and anise.

Shrimp and Broccoli stir Fry

  • Difficulty – This is a pretty quick and easy dinner to make, it’s all done in 30 minutes. Keep in my mind with stir frys, things happen quickly and you should get everything prepped before you start cooking.
  • Taste – The sauce is rich, sweet and a little spicy. the broccoli has a bit of a bite to it and the shrimps are tender and flavoursome.
  • Serving – If you serve rice or noodles on the side, this serves four people as a main course. If you want to keep the carbs down and just serve it alone, I’d say it will give two generous portions.

Shrimp Broccoli Stir Fry

Ingredients

  • Shrimp – I used raw shrimp in their shells. I peeled, cleaned and deviened them at home.
  • Broccoli – I only recommend using fresh broccoli for this recipe.
  • Onion – One small brown onion.
  • Oil – I used sesame oil which gives a great flavour to this stir fry.
  • Garlic – Fresh minced garlic.
  • Ginger – Fresh grated ginger.
  • Dried chilies – I used the small dried chilies that you can buy in the spice section of the supermarket.
  • To make the sauce – Soy sauce, teriyaki sauce, sweet chili sauce, brown sugar, corn flour and water.

REMEMBER, The full recipe and ingredient list can be found at the end of the post in the recipe card.

Instructions

  1. Make the sauce – In a small saucepan, combine the soy sauce, teriyaki sauce, sweet chili sauce and brown sugar. Set over medium to high heat and bring to a simmer. In a small glass, combine the corn flour and water, stir to combine. Pour into the sauce and whisk until the sauce thickens, about 30 seconds. Remove from heat and set aside.
  2. Sautee the onions – In a medium sized wok, add one tablespoon of sesame oil and the sliced onions. Give a good toss and sautee for about 5 minutes. Add the garlic, ginger and dried chilies. Stir and cook for about 30 seconds.
  3. Add the broccoli – Add the broccoli to the wok and toss or stir in. Cook for a further 5 minutes or so.
  4. Add the shrimp – Push the broccoli and onions to the side of the wok and add the extra tablespoon of sesame oil. Increase heat to high and add the shrimp. Lightly toss the shrimp and cook for about 3 – 4 minutes or until pink. Stir the shrimp into the broccoli.
  5. Pour over the sauce – Pour over the sauce and stir in. Remove from heat and add sesame seeds if desired. Serve with rice or noodles.

Recipe Tips

  • Prep ahead – Although this recipe is pretty easy and quick, you can do all the prep in advance and keep it on hand in the fridge before you are ready to cook.
  • Don’t over cook – Stir frys cook pretty quickly and you want the vegetables to have a bit of a crunch to them. So, make sure you only cook the onion and the broccoli until it’s lightly sauteed and not soft.
  • Serve immediately – Serve this as soon as it’s cooked. The broccoli will start to wilt and lose it’s crunch if you leave it to sit around too long.

Substitutions

  • Shrimp – I used frozen raw shrimp that came in their shells. I just cleaned them at home. You could use fresh shrimp or the frozen kind that come already cleaned and ready to cook. Don’t use precooked shrimp for this recipe.
  • Oil – I used sesame oil because it’s gives a great flavour to the stir fry. Alternatively, you could use any kind of vegetable oil, olive oil or peanut oil.
  • Dried chilies – I used dried chilies. You could use any kind of fresh chilies or even chili flakes for this stir fry.
  • For serving – I served this stir fry with white basmati rice. You could use any kind of rice like whole grain, wild rice or even egg noodles.

Serving

Friends, this has to be served fresh and hot as soon as it’s cooked. The broccoli will go to mush after a while and it just won’t have a great texture. So make sure to cook it just before you are planning to serve the dish.

Frequently Asked Questions

Do I need a wok to make a stir fry?
No, you don’t necessarily need a wok to make a great stir fry, you can use a deep sided skillet. If you do have a wok use it though. A wok is made of steel and it heats up and cooks quickly. The curved and round shape of a wok ensures that the cooked food is less oily.

What’s the difference between teriyaki sauce and stir fry sauce?

Teriyaki sauce is a Japanese stir fry sauce that contains light soy sauce rice wine vinegar, sugar and/or honey. Stir fry sauce is generally just soy sauce, sesame oil and sometimes cornflour.
