There are more than 10 varieties, including blue hake.  Generally they have a milder taste, are softer and have a smaller flake than cod.  It&#8217;s easy to cook with, generally inexpensive and can be found in most freezer sections of your grocery store. (or other white fish fillets)<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Coating<\/span><\/strong> &#8211; I used just regular flour for this recipe and it gives the fish a great crispy exterior when cooked<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Seasonings<\/span><\/strong> &#8211; Just simple salt and pepper.<\/li>\n\n\n\n<li><span style=\"text-decoration: underline;\"><strong>Vegetable oil &amp; butter<\/strong><\/span> &#8211; I like to use both oil and butter for frying fish for flavour as well as helping give the fish a crispy texture<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Lemon wedges<\/span><\/strong> &#8211; This fish goes great with fresh lemon wedges. <\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Garnish <\/span><\/strong>&#8211; fresh chopped parsley adds a nice finishing touch for the fish. Stir to combine.<\/li>\n\n\n\n<li><strong><em><span style=\"text-decoration: underline;\">Pat fish dry &amp; coat <\/span><\/em><\/strong>&#8211; make sure to pat both sides of the fish dry with paper towels, <strong><span style=\"text-decoration: underline;\">don&#8217;t skip!<\/span><\/strong>  Then dredge it in the flour mixture.  Frimly press the fish into the flour mixture to make sure it sticks. The fish won&#8217;t stick at all, unlike many of the thinner pans.<\/li>\n\n\n\n<li><strong><em><span style=\"text-decoration: underline;\">Heat the skillet before adding oil or butter<\/span><\/em><\/strong> &#8211; Heat the skillet over a medium to high heat until it just starts to lightly smoke.<\/li>\n\n\n\n<li><strong><em><span style=\"text-decoration: underline;\">Add butter and oil <\/span><\/em><\/strong>&#8211; when the pan is hot, add the butter and oil until it sizzles.<\/li>\n\n\n\n<li><strong><em><span style=\"text-decoration: underline;\">Don&#8217;t move the fish around<\/span><\/em><\/strong> &#8211; place the fish fillets into the hot pan.  Leave them to cook, don&#8217;t touch them.  Shake the pan after about a minute to loosen the fish, if it is sticking.  Then leave it to cook for a further 3 minutes.  Flip all the fish over and leave to cook for a further 4 minutes or until cooked through.
