If I&#8217;m completely honest I usually stick to toast and coffee most days.  It&#8217;s easy and it works.  But there are those weekend mornings where I have more time and it&#8217;s nice to make a big batch of <strong><em><span style=\"text-decoration: underline;\"><a href=\"https:\/\/juliascuisine.com\/chocolate-chip-waffles\/\">Chocolate Chip Waffles<\/a><\/span><\/em><\/strong>,<strong><em><span style=\"text-decoration: underline;\"><a href=\"https:\/\/juliascuisine.com\/old-fashion-pancakes-with-fruits-of-the-forest\/\"> Old Fashioned Pancakes<\/a><\/span><\/em><\/strong> or even <strong><em><span style=\"text-decoration: underline;\"><a href=\"https:\/\/juliascuisine.com\/wild-berry-compote-filled-crepes\/\">Berry Filled Crepes<\/a><\/span><\/em><\/strong>.  And all of those things have something in common, they are sweet.  Because that&#8217;s what I like.  <\/p>\n\n\n\n<p>At times, I do like to make something savoury like an <strong><em><span style=\"text-decoration: underline;\"><a href=\"https:\/\/juliascuisine.com\/spring-asparagus-and-gouda-omelette\/\">Omelette<\/a><\/span><\/em><\/strong> or <strong><em><span style=\"text-decoration: underline;\"><a href=\"https:\/\/juliascuisine.com\/hash-browns\/\">Hashbrowns<\/a><\/span><\/em><\/strong>.  And very recently, I gave this breakfast casserole a try.  If you love savoury breakfast recipes, you have to take a look and give it a try. Just make sure you pay attention when cooking the potatoes so they don&#8217;t stick or burn.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Taste<\/span><\/strong> &#8211;  This is a great breakfast with nice creamy eggs, sauteed peppers and crisp potatoes.  It isn&#8217;t overly cheesy, just topped with cheese.  The oregano adds a nice touch for the flavour.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Serving<\/span><\/strong> &#8211; This recipe makes four generous eggs.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Potatoes<\/span><\/strong> &#8211; I used 2 small potatoes.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Bell peppers<\/span><\/strong> &#8211; I used a mix of red, green and yellow.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Onion<\/span><\/strong> &#8211; A brown onion.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Seasonings<\/span><\/strong> &#8211; Black pepper, salt, garlic powder and dried oregano.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Cheese<\/span><\/strong> &#8211; I used shredded Gouda cheese.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Olive oil<\/span><\/strong> &#8211; I cooked the potatoes and peppers in olive oil.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Butter<\/span><\/strong> &#8211; Butter is used to cook the class=\"wp-block-heading\">Instructions<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a medium sized non-stick skillet set over medium heat, add two tablespoons of olive oil.&nbsp; Add the potatoes and shake the pan really well.&nbsp; Cook over medium heat until softened, but not fully cooked, about 15 minutes.<\/li>\n\n\n\n<li>Add the bell peppers and onions to the potatoes.&nbsp; Give a really good stir and continue to cook for a further 5 &#8211; 8 minutes until the vegetables are softened and cooked.<\/li>\n\n\n\n<li>Remove the vegetables from the skillet.<\/li>\n\n\n\n<li>Whisk the eggs in a medium sized bowl.<\/li>\n\n\n\n<li>Add the butter to the skillet.&nbsp; When the butter has melted, pour in the whisked eggs.&nbsp; Give a good stir around and continue to cook over medium-low heat until the eggs are soft, scrambled and almost fully cooked.&nbsp; This will take around 3 &#8211; 5 minutes.<\/li>\n\n\n\n<li>Add the vegetables back to the skillet and season with salt, pepper, and dried oregano.&nbsp; Stir well to combine and remove from heat.&nbsp; Top with Gouda cheese and a sprinkling of fresh parsley.<\/li>\n\n\n\n<li>Put under the broiler\/grill in the
