Season with salt and pepper and stir. Set aside.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Cook spring onions and spinach<\/span><\/strong> &#8211; In a 6 inch skillet set over medium heat, add one tablespoon of butter and the spring onions. Give a good stir cook until soft, about 3 &#8211; 4 minutes. Add the spinach and stir until wilted.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Add egg mixture<\/span><\/strong> &#8211; Pour the egg mixture evenly over the spinach. Evenly sprinkle over the cheese and cook over medium heat for about 5 &#8211; 8 minutes until it starts to come away from the sides. Just a few options could be bell peppers, zucchini or cut up cooked potatoes.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Leftover vegetables<\/span><\/strong> &#8211; Use leftover vegetables.
