Stir well to combine and set aside.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Pat dry cucumbers<\/span><\/strong> &#8211; Using paper towels, pat dry the cucumber slices and lay out on a plate or a tray. <\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Top with cream cheese and salmon<\/span><\/strong> &#8211; Spread a small amount of the cream cheese mixture over each cucumber slice. Top with a small piece of smoked salmon.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Garnish and serve<\/span><\/strong> &#8211; Sprinkle over a little extra black cracked pepper. Garnish with extra chives if desired and drizzle over a little lemon juice. prepare the cream cheese filling the day before serving. Cover and keep in the fridge until using.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Don&#8217;t cut cucumber slices too thin<\/span><\/strong> &#8211; Make sure to cut the slices at least 1\/2 inch thick.  If they are too thin, they will not be able to support the toppings.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Dry cucumber slices<\/span><\/strong>\u00a0\u2013 Make sure to completely dry the cucumber slices.  Otherwise, they may go a little soggy.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Use a sharp knife<\/span><\/strong>\u00a0\u2013 Smoked salmon is delicate, so you\u2019ll need very sharp knife to cut the small pieces.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Prep ahead<\/span><\/strong> &#8211; You can completely prepare these up to about 2 hours before serving.  Wrap them in plastic wrap and keep them refrigerated until serving.  Garnish just before serving.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">Serve cold<\/span><\/strong> &#8211; For best results, please serve these cold.
