I know, it&#8217;s another <strong>Lemon Chicken<\/strong> recipe and we have a lot here at <strong><em><a href=\"https:\/\/juliascuisine.com\/\">Julia&#8217;s Cuisine<\/a><\/em><\/strong> that&#8217;s for sure.  But Spring is a great time to use fresh flavours and seasonal ingredients like asparagus and lemon.  <\/p>\n\n\n\n<p>Earlier this year, I posted a recipe for <strong><em><a href=\"https:\/\/juliascuisine.com\/lemon-caper-chicken-thighs\/\">Lemon Caper Chicken Thighs<\/a><\/em><\/strong>, and this dish is a take on that one with a bit of a different spin. They are flavourful, tender and quick cooking.<\/li>\n\n\n\n<li><strong>Seasonings<\/strong> &#8211; I made a seasoning blend for the chicken using oregano, basil, thyme, garlic powder, salt and black pepper.<\/li>\n\n\n\n<li><strong>Olive oil<\/strong> &#8211; Olive oil is used to cook the chicken.<\/li>\n\n\n\n<li><strong>Garlic<\/strong> &#8211; I used fresh minced garlic.<\/li>\n\n\n\n<li><strong>Chicken broth<\/strong> &#8211; Carton chicken broth is used for making the sauce.<\/li>\n\n\n\n<li><strong>Lemon juice<\/strong> &#8211; I added fresh squeezed lemon juice to the sauce for a great lemon flavour.<\/li>\n\n\n\n<li><strong>Cream<\/strong> &#8211; Heavy cream is added to the sauce for a rich and creamy flavour and texture.<\/li>\n\n\n\n<li><strong>Asparagus<\/strong> &#8211; Fresh thick asparagus will work best for this recipe.<\/li>\n\n\n\n<li><strong>Parmesan cheese<\/strong> &#8211; Fresh grated parmesan cheese is added at the end. Whisk to combine. Lay out the chicken pieces and season both sides of the chicken with the seasoning blend.<\/li>\n\n\n\n<li><strong>Brown the chicken <\/strong>&#8211; Heat the olive oil in a large skillet set over high heat. Add the chicken pieces and cook for about 4 minutes. Flip the chicken over and continue to cook for a further 4 minutes. You are only browning the chicken at this stage, not fully cooking it through. Remove the chicken from the pan and set aside.<\/li>\n\n\n\n<li><strong>Make the sauce <\/strong>&#8211; Reduce the heat to medium and in the same skillet, add the minced garlic. Stir well until fragrant, about one minute. Add the chicken broth and lemon juice. Bring to a simmer and add the cream. Stir well and bring to a simmer, about 2 minutes.<\/li>\n\n\n\n<li><strong>Finish cooking the chicken<\/strong> &#8211; Reduce heat to medium low and add the chicken back to the pan. Cover and leave to cook for about 10 minutes.<\/li>\n\n\n\n<li><strong>Add asparagus<\/strong> &#8211; Remove the lid from the pan and add the fresh asparagus. Cover and leave to cook for a further 5 &#8211; 8 minutes.<\/li>\n\n\n\n<li><strong>Finish dish and serve<\/strong> &#8211; When the asparagus has cooked, add the parmesan cheese, lemon zest and fresh parsley. Stir and remove from heat.
